Chinese Cuisine: To begin with, you should plan a menu and decide how many dishes will be served. The basic Chinese family meal consists of four dishes and a soup plus, of course, rice. This assumes that there will be six people at the table; another dish is added for every two additional persons. A Chinese cook will increase the number of dishes, rather than the quantity of each dish. All the dishes are place in the center of the table and each person helps themselves.

I find Chinese cooking a lot like sex, a lot of preparation time with, very little cooking time. That is to say, the Chinese cook spends most of their time preparing the food, such as chopping the ingredients and less time cooking it.

Organization is essential to the success of Chinese cooking. Prepare all the ingredients and have them ready before starting to cook. If called for seasonings such as ginger, garlic and scallions should be chopped and ready to be spooned into the wok or skillet. Remember that the essence of almost all Chinese cooking, particularly stir-frying, is speed, not in the preliminaries, but in the cooking. Almost all the cooking, except for casserole dishes and soups, is done over high heat.
