Ingredients:
1 oz. Tequila
4 oz. Orange Juice
1/2 oz. Galliano
1/2 oz. Kahlua
Ice cubes
Procedure:
Place all the ingredients into a cocktail shaker, shake to blend and
pour over ice cubes in a highball glass
Serve and garnish
Notes:

Can be garnish with a twist of orange, a swizzle stick through a cherry, etc.
The amount of tequila, Galliano and kahlua to orange juice can vary
according to taste
Ingredients:

1 1/4 oz. Tequila
1/4 oz. Creme de Cassis
1 oz. Fresh Apple Cider
1/4 oz. Fresh lemon Juice
1 Red Apple, wedge
Procedure:
Fill a double old-fashioned glass with ice
Pour the ingredients over ice, and stir

The amount of tequila and cassis, to apple cider can be adjusted

Ingredients:
Lime peel
Salt
1 C. Crushed ice
1 Jigger tequila
1/2 Jigger triple sec
1/2 Jigger lime juice
Procedure:
Rub the rim of a cocktail glass with the lime peel
Dip the rim of the glass into salt; set aside
Over the ice in a cocktail shaker or large glass, pour the remaining
ingredients and stir
Carefully pour the liquid ingredients into the prepared cocktail glass

Notes:
Margarita is a cocktail made with tequila, an orange flavoured liquer
(usually Tripple Sec) and lime juice. The rim of the glass is
traditionally dipped in lime juice, then coarse salt. A Margerita can be
served straight up or on the rocks. It can also be blended with ice into a
slushy consistency

Scallop And Smoked Jalapeño Tequila Ceviche:
Ingredients Ingredients For Smoked Jalapeño Tequila:
2 C. Tequila
4 Jalapeños, halved (not seeded)
2 C. Wood chips, soaked in water
Ingredients For Ceviche:
2 Lbs. Sea scallops
2 Green peppers, diced
2 Red peppers, diced
1 Red onion, diced
1 Jicama, diced
3 Tomatoes, diced
1/2 C. Fresh cilantro, chopped
2 C. Lime juice
1 C. Lemon juice
1 C. Orange juice
2 C. Smoked jalepeño tequila
1 C. Coconut milk
Zest of 6 oranges
Orange wedges
Salt
Procedure For Smoked Jalapeño Tequila:
You can either smoke the jalapeños in a covered bbq or over an
open flame
To smoke over an open flame, you will need a shallow pan with a
perforated liner and a cover
Line the pan with the chips and place over a medium flame. When the
chips begin to smoke, place the jalepeños in the perforated liner
and cover the pan
Turn the flames down to low and smoke for 10 minutes
While the jalepeños are still hot, place in the tequila and
cover
Allow the tequila to sit for least 48 hours
Procedure For Ceviche:
Bring a large stockpot of salted water to a boil
Add the scallops and blanch for no more than 1 minute. Shock the
scallops in an ice water immediately, then drain
Combine all ingredients in a non-reactive bowl or container and allow
to sit refrigerated, for 3 hours allowing the acid to marry all the
flavours
Serve this beverage garnished, in a martini glass
Notes:
Hickory or mesquite wood chips can be used with this recipe
Garnish with avocado, green onion and tortilla chips
