Ingredients:
1 Lbs. Ground beef
1/2 t. Garlic, minced
1/2 Egg, beaten
Salt
Fresh ground black pepper
Worcestershire sauce
B.B.Q. Sauce
Procedure:
In a large mixing bowl add the beef, garlic and egg, then blend together with
your washed hands
Season with the salt, pepper and worcestershire to taste
Form the beef mixture into about 4 oz. medium thick patties and place them
onto a large plate or platter
Brush or spoon on the bbq. sauce so that both sides a covered
Grill are cook in a skillet on med-high heat turning once until done
Serve on a bun or roll along with condiments (see notes)
Notes:
Hamburgers are minced (ground) beef shaped into flat round cake and
grilled (broiled) or fried.
Hamburger was introduced into North America by German immigrants
A list of condiments that can be served on the hamburger is a choice of
- Cheese slices such as, Cheddar, Swiss, Mozza, Blue, etc.
- Crisp bacon slices
- Sliced tomato
- Sliced onion
- Sliced dill pickle
- Lettuce
- Relishes
- Mustards
- Ketchup
- Mayo
- Etc.
Some chefs add bread or cracker crumbs to the burger mixture, but I do not
because this will absorb the fat while it's cooking
Can be served with french fries, potato chips, salad, etc.
Ingredients:
2 Lbs. Ground beef
2 C Fresh bread crumbs (4 slices)
1/2 C. Milk
1 Onion, minced
2 Eggs
Salt
Fresh ground black pepper
Procedure:
In a large bowl, mix well the beef, crumbs and onion, then blend in the rest of
the ingredients, seasonings to taste
Spoon the beef mixture into a loaf pan, filling to the top
Bake in a preheated 350°F oven until done, about 1 1/2 hours
When finished let the loaf sit at room temperature for a few minutes, drain and
discard any drippings
With a spatula or knife, loosen the meat loaf from the sides of the pan and
invert onto a platter, then remove the pan
Slice, serve with potatoes, vegetables and a sauce (gravy) and garnish
Notes:
Lean ground beef should be used
Ketchup can be used in place of the sauce
Other food items can be added to the beef along with the onions such as,
other diced veg (Mushroom, tomato, etc.), herbs and spices, etc.
Ingredients:
2 Lbs. Ground beef
1 Onion, diced
8 oz. Can Cream style corn
6 Potatoes, peeled, cooked, Mashed
2 T. Butter, melted
Salt
Fresh ground black pepper
Procedure:
In a skillet over med-high heat cook the beef and onions until done, drain
Add the corn to the beef, season to taste and place into a loaf or pie pan, top
with the mashed potato
Brush or spoon the butter on top and bake in a preheated 350°F oven
until golden brown on top, about 30 to 45 minutes
Serve, garnish with paprika
Notes:
Other cooked mixed vegetables can be used in place of the corn
Grated cheddar cheese can be put over the top in place of the butter

2 Lbs. Ground beef
2 T. Oil (olive)
1 Clove garlic, minced
1 Onion, diced
2 T. Bread or cracker crumbs
1 Egg, beaten
2 oz. Milk
Salt
Fresh ground black pepper
Mushroom sauce (gravy)
Procedure:
In a small skillet heat the oil and sauté the garlic and onions, on med.
heat until soft, do not let them brown
In a large mixing bowl blend the beef, the sautéed garlic and onions
until well mixed
Add to the beef mixture the crumbs, egg, milk and seasonings to taste, mix
Shape about 6 oz. portions of the beef into oblong patties approximately 1/2
inch in thickness
Grill or fry the patties until done, flipping over when 1/2 done
Serve with potato and vegetable, top with the mushroom sauce, garnish
Notes:
Can be served as a hot sandwich with the gravy on top and fries
Other food items can be added to the beef mixture such as herbs and spices,
diced veg such as mushrooms, etc.
Ingredients:
2 Lbs. Ground beef
1 Onion
1 Stalk celery
1 Green pepper
1 Red pepper
1 Carrot
6 Tomatoes
1/2 Lbs. Mushrooms
2 Cloves garlic, minced
4 C. Tomato sauce
1/2 C. Tomato paste
1 T. Worcestershire sauce
1 T. Each of thyme, basil, oregano, ground mustard, parsely, salt, pepper
1/4 C. Sugar
Fresh grated parmesan cheese (optional)
Procedure:
Peel, wash and chop all the veg.
In a large sauce pot fry the beef and vegetables or seperately, drain
Add the garlic, tomato sauce, paste, worcestershire and simmer for about 1/2
hour, stirring occassionly.
Then add the herbs and seasonings to taste, sugar and simmer for 15 more
minutes, serve on pasta of your choice, top with the cheese, garnish
Notes:
Can be served with garlic bread
The vegetable can be used at your choice
You can eliminate the herbs be using a pre-made pasta sauce in place of the
tomato sauce
Serve on a pasta of you choice or thicken up with some more tomato paste
and use to make lasagne
