| Mom's Apple Cobbler |
| This recipe was sent to me by my lifelong friend Betty and it is simply delicious. A little work involved, but worth it. 1 stick butter or margarine 2 cups sugar 2 cups water 1 1/2 cups sifted self rising flour 1/2 cup shortening 1/3 cup milk 2 cups finely choped apples 1 tsp cinnamon Heat oven to 350 degrees. Melt the butter in a 13x9x2 inch baking dish or pan. In a saucepan heat sugar and water until sugar melts. Cut shortening into flour until particles are like fine crumbs. Add milk and stir with a fork only until dough leaves the sides of the bowl. Turn out onto lightly floured board or pastry cloth, knead just until smooth, roll dough out into a large rectangle about 1/4 inch thick. Sprinkle cinnamon over apples; then sprinkle apples evenly over the dough. Roll up the dough like a jelly roll. Dampen the edge of the dough with a little water and seal. Slice dough into 1/2 inch thick slices. Place in pan with melted butter. Pour sugar syrup around rolls. Bake for 55 to 60 min. This will look like too much syrup, but the crust will absorb it. |
| Peach Cobbler |
| Everytime I make a peach cobbler, I think of my nephew Luke and how he always remembers about one I made when he was a little boy of 4 or 5. This is not my recipe , but a borrowed one. 2 sticks margarine 2 cups sugar 1 1/2 cups milk 1 1/2 cups self-rising flour 1 can peaches Melt margarine in a 9x13 inch pan in 350 degree oven. Cut peaches in two and place pit side down in pan of melted margarine. Mix sugar, milk and flour together and pour in pan with butter and peaches. Add about 1/2 of liquit from the can of peaches. Bake one hour at 350 deg. Cut oven off after one hour and leave in oven about 15 min. |
| Lemon Fluffy |
| 1 3oz. pkg. lemon gelatin 1 13 oz can evaporated milk; chilled 1 cup hot water 1/2 teaspoon salt 1 cup sugar 1 cup crushed vanilla wafers 1/4 cup lemon juice In a bowl dissolve the gelatin in the hot water. Add the sugar and lemon juice: Mix well and chill til slightly congealed. Beat the chilled milk at high speed til very fluffy; adding salt while beating. Slowly fold the milk into the slightly congealed gelatin til well mixed. Line a 9 x 11 pan with vanilla wafers. Turn the gelatin mix into the pan over the wafer crumbs, and chill thoroughly. Serves 12 |
