1 or 2 ears of purple corn (originally from Peru) 2 liters of water 1 1/2 cups of sugar some pineapple (optional) ice cubes (optional)
- First, clean the ears of corn. - Next, boil the corn, cob and all, in the water (with the pineapple, if desired). - When it's cool, pour the water in the pitcher and add the sugar. - Remove the grains of corn and stir one more time. - To finish, add ice cubes (if you want) and enjoy!

Cappuccino Coffee (Luis Olivier Becerra)
3/4 cup hot water 1/4 cup milk 1 teaspoon instant coffee 2 teaspoons sugar 1/4 teaspoon mocha flavouring
1.- First, combine the sugar and hot water in a coffee cup. 2.- Next, mix the coffee with the milk. 3.- Combine this mixture with the mocha flavouring. 4.- And finally, enjoy this delicious mocha flavour cappuccino.

1/4 cup sugar 5 cups water a lot of strawberries (like a kilo) ice cubes
First, blend the strawberries, the sugar, and one cup water in the blender. Then strain the mix. Next, add four cups water. Finally, put the ice cubes in the pitcher. Serve in glasses.

Mushroom Soup (Oliva Gpe. L�pez Pe�a)
1/2 kg of mushrooms 1/4 kg of tomatoes one small onion one small clove garlic chicken broth one branch of epazote* 1/2 cup of olive oil 3 green chili peppers
First, cut the tomatoes, onion, garlic, and chili peppers in little pieces. Put the olive oil in a pot, and when it is hot, put the tomato, onion, and garlic in to sautee. Next, add the mushrooms and the epazote; when this combination has seasoned, add the chicken broth and chilis. Cook for ten minutes, then serve. This dish is very nutritious and pleasant. You can eat it with new-made tortillas.
*epazote is an herb

Spaghetti in the Oven (Pamela Espinosa M�ndez)
300 gr. spaghetti, cooked and drained 1 1/2 cups of cream 3 eggs 250 gr. ham, cut in cubes 1/4 cup of parsley, minced 90 gr. butter, in cubes 125 gr. Chihuahua cheese* salt and pepper to taste
1.- First, in a bowl beat the cream and the eggs, and add salt and pepper to taste. 2.- Next, combine this mixture with the ham, the parsley, the cheese in thin slices, and the butter. Put it in a baking dish. 3.- Bake at 200�C, during 10 minutes. 4.- Finally, serve and enjoy this delicious dish.
*If Chihuahua cheese isn't available, use chedder or another similar cheese.

Fried Fish (Pablo Javier L�pez E.)
1 whole huachinango [red snapper] 1/4 cup melted butter 1/2 teaspoon salt 1/4 cup boiled water 1 small onion, sliced pepper to taste
1.- Wash the fish and dry very well with paper. Fry the fish with the onion and salt. 2.- Mix the butter with the other ingredients. 3.- Serve with cream of corn soup and white wine. 4.- Enjoy the fish and drink the wine. It is delicious.

Lamb in Green Sauce (Daniel Diego S�nchez)
200 gm. green chili peppers 1 kg. green tomatoes garlice to taste onion to taste salt to taste 1 kg. lamb
First, put the green tomatoes and the chili peppers to boil. Put in the blender the garlic, onion, and chili peppers, and green tomatoes; blend. Fry this mixture for ten minutes. Add water and let boil. Fry the lamb and add it to the mixture. Add salt to taste. Boil for 20 minutes. Serve hot, with beans.

Omelette (Mar�a Estela Agui�aga Altamira)
2 eggs 1/4 cup milk cheese to taste oil for frying salt to taste
1.- First, put the two eggs in a bowl and beat them. 2.- Second, add the milk and salt to the eggs. 3.- After that, put some oil in a large pan and put the pan on the stove. 4.- Put the egg mixture in the pan. 5.- Add some cheese and cook the omelette for about three minutes. 6.- Finally, serve the omelette on a plate and eat it. It's a delicious breakfast!
