I started making these Mini Christmas Cakes for a school fair ... They've become extremely popular, and I make about 75 !!!!  I start preparing early October .... and the fair is usually beginning December .... giving me many sleepless nights !!!!!   The sizes are 3" and 4" round, and 4" square.....
