Basic Italian-Style Tomato Sauce

Sauté until tender:
1/2 cup olive oil
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced

Add:
6 cups canned tomato sauce
1 Tbsp dried basil
1/2 cup fresh parsley, chopped
3 cloves garlic, minced
1 tsp salt

Simmer over low heat for 30 minutes. This sauce can be blended (after being cooled) for a smooth sauce, although it's not necessary.

Try this one with No-meat Balls.
