Welcome to my Australian recipe online book where you will find, and hopefully try some wonderful Australian, healthy, tasty snacks, desserts, meals and beverages.

I am not talking about meat pies and vegemite sandwiches, nor am I talking about kangaroo steaks or emu sausages!!! I will be showing you wholesome, yet simple hearty, healthy recipes for the whole family.

These recipes will change from time to time, so please keep checking and updating your book from here. If you have missed something, don't despair! Let me know and I will email to you what you have missed out on.

If you try anything from this page, please let me know how you went. I would love to hear as many success stories as I can. Hopefully not too many failures!!!

LETS START.

How would you like to start a dinner with Damper bread dipped with Golden Syrup as an entree.
Your main meal will be marinated chicken breasts peices served on rice, either boiled or fried, followed by a fruity Pavlova dessert. For all you children, or adults who are still children at heart, I'll also put on  the old favourite, Chocolate Crackles. Topped off with the trusty Mint Slice after dinner mint.

Stay tuned. This will be served piping hot soon.

CARD NUMBER 1.
DAMPER BREAD.

You will need,
3 cups self raising flour.
3 tablespoons butter
1 1/2 cups of water or milk.

METHOD.
1. Pre Heat oven to 200 deg C.

2. Place flour and salt in a mixing bowl and mix well. Rub the butter through the flour mixture with your fingers. Pour in the liquid gradually mixing well between each new addition.
3. When well mixed, form the dough into a flat ball. Place it on a greased and floured oven tray.
4. Place in the oven for 30-35 minutes to cook. Bread should be golden brown in colour and sound hollow when you tap on it.

Serve warm with butter and jam, honey ot golden syrup.

MARINATED CHICKEN & CELERY.

PAVLOVA.


CARD NUMBER 4.
CHOCOLATE CRACKLES.

You will need:

* 4 cups of Rice Bubbles. (For all you Americans, rice puffs) Breakfast cereal.
* 1 1/2 cups icing sugar.
* 1 cup desiccated coconut.
* 3 Tbsp cocoa.
* 250g Copha. (Vegetable fat)

METHOD.
In a large bowl, mix rice bubbles, icing sugar, coconut and cocoa. Slowly melt the copha in a saucepan over low heat. Allow to cool slightly. Add to rice bubbles mixture, stirring until well combined. Spoon mixture into paper patty cases and refrigerate until firm.

Makes approximately 24.

CARD NUMBER 5
CHOC CHIP BEETLES.

You will need,
* 125 g Butter.
* 1 egg.
*1 1/2 cups self raising flour.
*3 cups icing sugar, sifted.
* 30 g extra butter, melted.
* Dark, milk or white CHOC BITS.
* Dark, milk or white melts.
* silver cachous for decorations.
* 3/4 cup sugar.
* 1/2 tsp vanilla.
* 3/4 cup milk.
* 1/4 cup hot water.

METHOD
Pre-heat oven to 180 deg C.
Beat butter, sugar, egg & vanilla until light & creamy. Add flour & milk, beat on low speed until just combined. Spoon level tablespoonful of mixture into greased patty pans. Bake 12-14 minutes until golden, cool on a wire rack.
Combine icing sugar, extra melted butter and water in a bowl, stir until smooth, colour as desired.
Spread rounded side of cakes with icing and decorate with choc bits for body beetle and melts aand silver cachous foe the head and eyes.
Makes 36.
