Ingredients
- Soup
- 3 c. cubed turkey or chicken (or 1 1/2 lb. ground turkey, browned)
- 1 can (15 oz.) tomato sauce
- 1 can (14 1/2 oz.) diced tomatoes, undrained
- 1 3/4 c. water
- 1 envelope chili seasoning
- 1 can (16 oz.) kidney beans, drained
- 1 can (15 oz.) black beans, drained
- 1 can (15 1/4 oz.) whole kernel corn, drained
- Dumplings
- 1 1/2 c. bisquick
- 1/2 c. cornmeal
- 2/3 c. milk
- Topping
- 1/4 c. cheddar cheese
Directions
In a dutch oven, combine the first 5 ingredients and simmer for 10 minutes.Add beans and corn.
Mix bisquick, cornmeal and milk.
Drop by heaping tablespoons on simmering soup.
Cover and cook 12-15 minutes.
Sprinkle with cheese, cover and simmer 1 min. longer.
Serve immediately.
Makes 2 1/2 quarts.
**For spicier soup, add 1/2 T. chili powder and 1/2 t. cumin or substitute chili beans (with gravy) for kidney beans.**
