Ingredients
- 4 large onions, sliced
- 1/2 stick butter or margarine
- 2 Tbsp. flour
- 7 c. beef broth (use instant crystals, dissolved in boiling water)
- Pepper to taste
- 6 slices French bread
- 3/4 c. Swiss cheese, grated
Directions
Slice peeled onions thinly.Separate into rings.
Saute rings in hot butter until softened and lightly browned.
Stir in flour; add onions and pepper to hot broth.
Cover and simmer for 20 minutes.
Ladle soup into 6 bowls.
Place slice of French bread on top of each bowl of soup.
Sprinkle generously with shredded cheese.
Place dishes on a cookie sheet and place under broiler for 3 minutes until cheese is melted and lightly browned.
Yields 6 servings.
