Dutch Oven Recipes
Ham and Potatoes

7-8 pound ham
1 large onion
5 pounds potatoes
1/2 cup butter
Salt
Pepper
Water

Scrub potatoes and slice to about 1/4 in thickness.  Do not peel. Grease the inside of the dutch oven well, then place ham in the center of the oven.  Add half potatoes, about half the onion, and about 1/2 the butter (cut into pats and placed evenly over potatoes and onions).  Salt and pepper thoroughly.  Add another layer of potatoes and onions, then butter, salt, and pepper.  Add about 1/2 cup water for steam.  Cover and cook for about 1 - 1/2 hours.

After removing from the fire, add an additional 1/2 cup water and replace lid.  Allow to steam for about 10 minutes.  Enjoy!
