Dutch oven cooking is one of the simplest forms of outdoor cooking.  We use our fire pit for dutch oven cooking; although I suppose you could use a grill.  We use a combination of fuels, wood for in the pit, and charcoal for the lid.  This produces an even heat and nice results.
First, we start with the pit.  This is an area that we've used for fires over and over again, but we re-dig it each time.  For dutch oven cooking, the pit only needs to be about 6-8 inches deep, and about twice as big around as your pot.  The oven we're using in the pictures is a 12 inch, and we're using it to cook an 8 pound ham. I grease the inside of the oven a bit with either butter or lard before adding the potatoes and ham.  This helps keep things from sticking and adds to the flavor.  While I get the food all ready, dh starts to work on the fire.  Here is how it looks just before we put the lid on and carry it out to the fire.  The fire is started in the pit using leaves and twigs....then several logs are added.
He uses a charcoal chimney starter to get the coals nice and hot for the lid.  You can pull hot coals from the fire to use on the lid instead.  It takes just about 1 hour cook thoroughly.
The end result is DELICIOUS, and you still have a fire for smores!
