Blarney Stone Cookies
Gosh, Wednesday already and I haven't done the recipe page for last week yet....
Well here's a new recipe for you

Rich and chocolatey cookies that are formed into logs and chilled before being sliced and baked.
Once baked they are glazed with green icing and topped with a HERSHEY KISSES®* Chocolate.
Ingredients:
1 cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1-3/4 cup all-purpose flour
½ cup HERSHEY®* Cocoa Powder
1-1/2 teaspoon baking powder
½ teaspoon salt
36 HERSHEY KISSES®* Milk Chocolates
¾ cup confectioners' sugar
1 tablespoon and ½ teaspoon milk
¼ teaspoon vanilla extract
3 drops green food colouring
Directions
1. Beat butter, sugar, egg and vanilla in large bowl until well blended.
Stir together flour, cocoa, baking powder and salt; gradually add to butter mixture, beating until well blended.
Divide dough in half; place each half on separate sheet of wax paper.
2. Shape each half into a log with squared sides, about 7 inches long and 2-1/4 inches wide.
Wrap each log in wax paper or plastic.
Refrigerate until firm, at least 8 hours.
3. Heat oven to 325F.
Cut logs into 3/8-inch thick slices.
Place onto ungreased cookie sheet.
4. Bake 15 minutes or until set.
Cool slightly; remove from cookie sheet or wire rack.
Cool completely.
Remove wrappers from HERSHEY KISSES®* Chocolates.
5. Stir together 3/4 cup powdered sugar, milk and 1/4 teaspoon vanilla extract and 3 or 4 drops green food colour, if desired, in a small bowl until of drizzling consistency.
Drizzle over top of cookies.
Immediately place a HERSHEY KISSES®* Chocolates on each cookie.
Makes about 3 dozen cookies.

Sunshine Cake

1 yellow cake mix
4 eggs
1/2 cup oil
1 can mandarin orange slices with juice ~ 11 oz
1 can crushed pineapple ~ 20 oz
1 box vanilla instant pudding mix ~ 4 oz
1 tub Cool Whip ~ 9 oz
Combine first 4 ingredients and beat as directions on cake mix box indicate.
Grease and flour 3 layer cake pans.
Bake at 350 degrees for 22-25 minutes.
Cool on wire racks thoroughly.
Blend pineapple with pudding mix.
Let stand 5 minutes.
Stir in Cool Whip and spread on cake.
Cake must be kept refrigerated.

Shamrock Salad

A festive fruit and gelatine salad treat
Ingredients:
1 can (16 ounces) pear halves
1 package lime gelatine (3 ounces)
1 cup boiling water
1/2 cup cold water
1/2 cup heavy cream
2 tsp. powdered sugar
1/2 cup chopped nuts
Lime slices
Directions:
Drain pears, reserving 1/2 cup syrup and 3 pear halves.
Dice remaining pears.
Dissolve gelatine in boiling water.
Stir in cold water and reserved pear syrup.
Pour 3/4 cup of the gelatine in a one quart mold.
Arrange pear halves in shamrock shape in the bottom of the mold.
Chill until almost set.
In the meantime, chill remaining gelatine until it is thick like egg whites.
Whip cream, adding powdered sugar, and fold into the gelatine.
Fold in diced pears and nuts.
Pour over the layer of pears in the mold and chill until firm.
Unmold the salad on a platter and garnish with lime slices.

Crunchy Chicken Casserole

This is a new recipe I just found! I'm going to give it a try myself... it sounds pretty yummy!

3 c. chopped chicken
1/2 c. slivered almonds
1 (8 1/2 oz.) can water chestnuts, sliced
1/4 c. chopped pimento
1/4 tsp. celery salt
1/8 tsp. paprika
1 Tbsp. chopped parsley
1/2 c. chopped mushrooms
1 (10 3/4 oz.) can cream of mushroom soup, undiluted
1/2 c. French fried onions, crumbled
1/2 c. shredded sharp Cheddar cheese
Combine all ingredients except fried onions and cheese.
Pour into a greased 1 1/2 quart casserole.
Sprinkle onion rings and cheese over top.
Bake at 350 degrees for 30 minutes.
Serves 6.
Freezes well, add onion rings and cheese after thawing.
