Easy Sipping EggNog

I got this recipe out of the Canadian Living Christmas Book.

6 eggs
1/2 cup granulated sugar
2 cups milk
1 orange
2 cups light cream
1/2 cup brandy
1/2 cup dark rum
1 cup whipping cream
Freshly grated nutmeg or shaved chocolate
In large saucepan, whisk together eggs and sugar; gradually whisk in milk.
Using vegetable peeler, thinly peel off strips of orange rind.
Add to milk mixture; cook over medium-low heat, whisking constantly, for 10-15 minutes or until mixture coats back of spoon, or until candy thermometer registers 160�F (70�C)
Immediately strain into heat proof bowl; whisk in light cream.
Let cool slightly; cover and refrigerate for at least 2 hours or up to 24 hours or until chilled.
Stir in brandy and rum.
Whip cream; fold into eggnog mixture.
Serve in chilled punch bowl or individual glasses.
Sprinkle with nutmeg.
Makes 12 to 16 servings.

Lemon Snowflakes

Okay, no crockpot today! Here's one of our family's favourite holiday cookies.

1 package lemon cake mix with pudding in the mix
2 1/4 cups frozen whipped topping, thawed
1 egg
Powdered sugar
In a mixing bowl, combine the cake mix, whipped topping and egg.
Beat on medium speed until blended.
Batter will be very sticky.
Drop by teaspoonfuls into the powdered sugar, roll lightly to coat.
Place on an ungreased cookie sheet.
Bake at 350 for 10-12 minutes.
YIELD: 4-5 dozen small cookies.
I make larger cookies and get about 3 dozen from this recipe.
When these come out of the oven, they have cracked open across the top and resemble snowflakes!
Very pretty and very yummy!

Cheesecake Topped Brownies

A Sweet recipe for ya's.....
1 (21.5 ounce) package brownie mix
1 (8 ounce) package cream cheese, softened
2 tablespoons butter, softened
1 tablespoon cornstarch
1 (14 ounce) can sweetened condensed milk
1 egg
1 teaspoon vanilla extract
1 (16 ounce) container prepared chocolate frosting
Preheat oven 350 degrees F (175 degrees C).
Grease a 9x13 inch baking pan.
Prepare brownie mix according to the directions on the package.
Spread into prepared baking pan.
In a medium bowl, beat cream cheese, butter and cornstarch until fluffy.
Gradually beat in sweetened condensed milk, egg and vanilla until smooth.
Pour cream cheese mixture evenly over brownie batter.
Bake in preheated oven for 45 minutes, or until top is lightly browned.
Allow to cool, spread with frosting, and cut into bars.
Store covered in refrigerator, or freeze in a single layer for up to 2 weeks.

HOT SHRIMP WITH DIPPING SAUCE

1/4 C. butter
6 T lemon juice
3 lbs shrimp (fresh or frozen)
Melt butter in heavy skillet.
Add lemon juice.
When moisture bubbles add shrimp.
Keep heat very low.
This can be done in a chafing dish at the table.
Sauce:
1 1/2 c. ketchup
1/2 t salt
1T horseradish
1t onion juice
1/2 t. tabasco sauce
1/4 c. lemon juice
1 T worcestershire sauce
1 t finely chopped celery
combine and chill ingredients.

Quick Candy Apple Slices

You will need Granny Smith or Jonathon Apples for this recipe - you really need a tart apple to counter the sweetness of this.
1 can Eagle Brand Sweetened Condensed Milk
1 stick butter
1 16 oz. pkg. caramels
Unwrap package of caramels and place in microwave safe bowl.
Add butter and can milk.
Put in microwave for several minutes, careful not to scorch it.
Pull it out and stir it every so often.
Leftovers can be kept in the frig and reheated in microwave.
Drizzle this over sliced apples or even popcorn - and have cream cheese on the side to serve with it.
