Roasted Citrus Turkey Breast

It's turkey time! Try a new way to cook this bird. It's packed full of flavor. Enjoy!

Ingredients:
1 frozen bone-in turkey breast (4-5 pounds)
Pinch of parsley, finely chopped
Pinch of fresh thyme, finely chopped
Pinch of fresh rosemary, finely chopped
Pinch of freshly ground black pepper
Pinch of paprika
2 oranges
1 lemon
Preparation:
Thaw the frozen turkey.
Rinse and pat dry with paper towels.
In a medium bowl, combine the parsley, thyme and rosemary.
Grate the oranges and lemon peel and set the oranges and lemon aside.
Add the peels to the herb mixture and toss until combined.
Rub the herb mixture over the skin of the turkey.
Place the turkey on a rack in a large roasting pan.
Cut the oranges and lemon in half and squeeze their juices over the turkey.
Also sprinkle the turkey with the pepper and paprika.
Insert a meat thermometer in the thickest part of the breast.
Roast turkey uncovered, at 325 degrees F for 2 1/2 hours or until the thermometer registers 170 degrees to 175 degrees.
Baste turkey often with the pan juices.
Remove and discard the skin before serving.

And yet another crockpot recipe!

8 chicken thighs, or 4 breasts
1 can diced tomatoes
1 can tomato paste
1 chopped bell pepper
1 chopped onion
1 cup chopped ham
1 cup diced andouille sausage (or polska kielbasa)
Tabasco sauce to taste
Throw it all in the crock and cook on low 4-5 hours.
It can be thickened a little at the end with cornstarch.
Serve over rice.
(It works well with turkey leftovers too!!)

Homemade mac & cheese

Just finished making homemade mac & cheese and it's ready to pop in the oven for dinner. Here's the recipe if you want.
Pre heat oven to 375* F
3 TBSPN margarine,
1/4 flour,
1 1/2 C uncooked elbow mac,
3 cups milk,
1 tsp dry mustard (optional),
3/4 tsp salt,
1/4 tsp pepper,
1 1/2 cups shredded cheddar cheese,
1/4 cups grated parmesan
{optional 2 tblsp marg and 1/3 cup breadcrumbs for topping}
Cook mac in boiling salted water until tender: drain and rinse with cold water.
In sauce pan melt the 3 tblsp marg.
Stir in flour & cook, stirring for 1 minute.
Gradually whisk in milk, mustard, salt and pepper.
Bring to a boil, whisking constantly.
Turn heat down, but continue boiling and whisking for one minute.
Remove from heat & whisk in cheeses until smooth.
Put mac in a 2 quart baking dish, pour cheese over top and stir.
If you want the topping (my kids don't like it) melt the 2 tblspn marg, stir in crumbs and sprinkle on top.
Bake 30 minutes, let stand for about 10.
Makes 8 servings.
