White wines are usually consumed with lighter meals, think lunch, smaller dinners, and appetisers or as an apritif themselves. They're more refreshing, lighter in both style and taste than most of their red wine opposite numbers, making them superb for spring and summer occasions. The old suggestion of white wine with white beef still is true in several examples, but there are lots of exceptions and palate preferences that dictate which wines to pair with what foods.
