RECIPES
IMPOSSIBLE PIE.

1/2 breakfast cup of packaged pastry mix.
3 eggs, beaten
1 onion, diced finely
3 bacon rashers, chopped finely
1 cup grated cheese and 1 tablespoon extra
1 cup of cooked vegetables, chopped small
1 1/2 cups of milk
Parsley and seasoning to taste.

Place all ingredients, except parsley in a bowl and mix well.  Pour into a greased pie dish and sprinkle with extra tablespoon of cheese and parsley.  Bake in a moderate oven for 30 minutes, until browned and set.
Serve with side salad and crusty bread

GUILT FREE DRESSING

1/2 cup of low fat yoghurt
2 tablespoons of herbs of your choice
2 tablespoons no-oil French dressing
1 tablespoon grainy mustard

Place all ingredients in a screw top jar. Shake until well blended.
Pour over your favourite salad, pasta or potatoes.

QUICK MIX PATTY CAKES

1 1/2 cups of self raising flour
1/2 cup of caster sugar
2 eggs
1/4 cup of milk
3 tablespoons of softened butter

Mix all ingredients and then beat for 3 minutes.
Place mixture in patty pans and bake.
      Oven temperature 190 degrees c

SIMPLE PASTA SALAD

I packet of Barilla No 49 pasta, cooked al dente.
1 small green capsicum, finely diced
1 small red capsicum, finely diced
1 white onion, finely chopped.
1 440 gr.can red kidney beans, rinsed and drained.
salt
pepper
vinegar and olive oil

Place ingredients in a bowl.  Add salt and pepper to taste.  Add 2 tablespoons of olive oil and a dash of vinegar.  Toss gently  to blend all ingredients. 
Tip. While the pasta is cooking, add 2 bacon rashers.  You can then dice the bacon and add it to the salad.

RUBY'S CHEESE AND ONION BAKE

Slices of cheese
I brown onion, sliced
1 large tomato, sliced
bacon rashers
sliced mushrooms

Lightly grease a casserole dish and arrange ingredients in layers.
Tomato slices, cheese slices, onion slices, bacon rashers and mushroom slices. Begin the next layer with cheese slices, onion, tomato. bacon and mushroom.   You can add as many layers as you wish. Cover with lid or alfoil and bake in a 180 degree C. oven until cooked.

This is a particularly tasty dish and you will want seconds!

Potato Casserole 
   (Microwave)

3 large potatoes, sliced
3 bacon rashers, chopped
1 large onion, chopped
tasty cheese, grated
3/4 cup of cream
paprika
60gr. butter

In a well greased microwave casserole, place potato,bacon,onion and cheese in layers, repeating layers until all ingredients have been used. Boil cream, then pour over potatoes. Sprinkle paprika on top and add a few amall knobs of butter.   Microwave on high for 20 - 30 minutes.
