Vinegar Pudding

Ingredients

18ml Butter
125ml Sugar
2 Eggs beaten
375g Flour
24ml Dried Ginger
5ml Bicarbonate of Soda
2,5ml Grated Nutmeg
25ml Apricot Jam

Method

Beat butter and sugar together and add the beaten eggs. Sift together the dry ingredients and add to the egg mixture. Stir in the apricot jam thoroughly. Pour the batter into a deep greased baking dish.

Syrup Ingredients

500ml Water
500ml Sugar
125ml Vinegar

Method

Mix together syrup ingredients and bring to the boil stirring continously until dissolved. Allow to coolPour over batter. DO NOT MIX. Bake for 30 to 40 minutes till brown at 350� F.
