125g Dried fruit cake mix

Soak dried fruit in hot liquid for 30 minutes.
Cream butter and sugar. Add eggs and beat well. Sift together dry ingredients. Add to egg mixture and blend well. Add vanilla essence and cinnamon. Add milk a little at a time. Drain fruit mixture, reserving liquid. Fold in fruit mixture together with lemon rind. Pour into greased baking dish.

40ml Icing Sugar

Mix together syrup ingredients and liquid reserved from soaking mixed dried fruit. Pour over batter. DO NOT MIX. Bake for 30 minutes at 350� F.
