Ward Dinner Idea (Food)

When I was first put in as RS president I thought our budget was WAY small.  I have since discovered that we can live with whatever budget we are given and do it quite nicely I might add (we are $250 under budget for the year right now).  But back then I decided everything had to be done on a shoestring.

For our RS BD dinner we served twice baked potatoes.  We got our potatoes at a food warehouse type place (Costco).  Baked them and then scooped out the inside & whipped it with cream cheese, milk, butter, salt, pepper, and onion powder.  We set aside a bowl full of this to use for a garnish & then added diced ham and grated cheese to the rest.

We re-stuffed the potatoes with the ham/cheese mixture and then used a large star cake decorating tip and a pastry bag and piped LARGE potato stars all along the top of the potatoes.  This gave a very nice main dish that was not FULL of meat.  The potatoes were then frozen for use the next week (no last minute prepping which was nice).

We didn't serve it buffet style, we set all the food on individual plates and had the beehive age girls serve it.  The plate had a parsley garnish, the potato, french style green beans with almonds and mushrooms, and a fruit salad (with apples, bananas, canned pineapple, and kiwi fruit--served  with a celery/poppy seed dressing that is kind of sweet/sour and very yummy.  For dessert we had some sisters bring  DECORATED cakes and used them for the centerpieces on the tables.  (Some people were VERY picky about where they sat :)
