APPLE CAKE IN A JAR
2/3 cup shortening
2 2/3 c. sugar
4 eggs
1 tsp. cinnamon
2 tsp. baking soda
1/2 tsp baking powder
1 1/3 tsp salt
3 c. flour
2/3 c. water
3 cups grated, peeled apples
2/3 c. raisins
2/3 c. chopped nuts
Mix the ingredients rogether in the order given. Sterilize 7 to 9 WIDE MOUTH pint jars and lids. Grease them with shortening. Fill the jars half full and bake on the middle wire rack in the oven. Bake for 45 minutes at 325 degrees.
As soon as the cake is done, remove the bottles from the oven, one at a time. Wipe the rim of the bottle clean with cloth and put on the HOT STERILIZED LIDS. Screw down the bands and let seal.
IMPORTANT: Do not use small mouth jars. Do not add any other ingredients. As the cake cools in the sealed jars, it will pull away from the sides of the jar and come out easily when ready to serve. Slice and serve with the lemon sauce. (recipe follows)
LEMON SAUCE: 2 T. cornstarch
1/2 c. sugar
pinch of salt
1 c. boiling water
2 T. butter
4 1/2 tsp. finely grated lemon rind
2 T. lemon juice
In a pan, thoroughly stir together the corn starch, sugar, and salt. Gradually stir in the boiling water, stirring constantly to keep it smooth. Continue stirring and cook over moderate heat until boiling. Boil gently for about 20 minutes. Remove from heat, add butter, lemon rind and juice. Stir thoroughly. Serve hot over Apple Cake In A Jar.
COOKIES IN A JAR
1 cake mix, any flavor
1/2 c. oats, quick or old fashioned
1 c. chocolate chips
Optional add in: Butterscotch chips, raisins, milk chocolate chips, white chips, nuts, etc. Use your imagination and go crazy.
This is mixed up and put into a 1 quart container. Put this info on a card and attach it to the jar. If giving as a gift, you may want to decorate the card and jar up a bit.
Add to mix:
1/2 c. oil
2 eggs slightly beatehn
Drop dough by rounded teaspoon 2 inches apart onto ungreased cookie sheet. Bake at 350 degrees for 8 - 10 minutes. Cool a minute before removing from cookie sheet.
HINT: Do not overbake. Infact they are much better underbaked a little and left on cookie sheet for 5 minutes before removing.
LAYERED COOKIES IN A JAR
The ingredients are layered in the jar in the following order:
1st layer: 1/2 cup plus 1/8 cup flour, mixed with 2/3 tsp salt
2nd layer: 1/3 cup cocoa
3rd layer: 1/2 cup flour
4th layer: 2/3 cup brown sugar
5th layer: 2/3 cup white sugar
6th layer: 1/2 cup semi-sweet chocolate chips
7th layer: 1/2 cup vanilla chips
8th layer: 1/2 cup chopped walnuts
For instruction tag:
TO MAKE YOUR COOKIE BARS, JUST ADD:
1 tsp. vanilla
2/3 cup vegetable oil
3 eggs
Bake at 350 degrees for 32-37 minutes for a 7" x 11" pan or 27 - 29 minutes for a 9" x 9" pan.

Actually this wasn't a cake at all, but one of our RS sisters here on the list sent the following recipes to my snail mail.....enjoy.
BROWNIES IN A BAG
You will need:
Ingredients for making the brownie mix.
Brown paper lunch bag
Copy of tag (in this case, make a cute tag large
enough to leave message)
10 x 11 inch zip-lock plastic bag
Ribbon
DIRECTIONS:
Copy tag (Make one) Make brownie mix. Put brownie mix in a large zip-lock bag and then in the brown bag. Fold bag on angle as shown. (The pix shows that the front left corner is folded down several times till it is about 4 inches shorter than the upper right corner). Add tag and ribbon.
Brownies In A Bag
3/4 cup Cocoa
1 1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
2 cups sugar
Mix cocoa and soda together well. Add other dry ingredients and follow directions on the tag. (tag looks like it has been glued to the front...ribbon I guess you just tie and place on bag. ( I would be tempted to punch 2 holes in the folded top edge and lace the ribbon thru and tie to keep bag closed....just my 2 cents!)

So here's some quick and easy brownies
for you to make.
(Add 1/2 c. boiling water to dry ingredients. Stir in 2/3 cup oil, 2 eggs and 1 tsp. vanilla. Pour in lightly greased 9 x 13 inch pan and bake at 350 degrees for 35 to 40 minutes. ENJOY!
FRIENDSHIP SOUP IN A JAR
In a 1 pint jar, layer the following in order:
1/4 c. red lentils
1/8 c. pearl barley
1/4 c. dehydrated mixed vegetables
1/8 c. split yellow peas
1/4 c. green split peas
1/4 c. alphabet macaroni
top jar off with colored mixed noodles or salad pasta
To cook soup, pour pasta into cup. Add it in the last 10 minutes of cooking.
NOTE: There's not an amount of time given for how long it needs to cook.

A FRIENDSHIP SOUP
Every day life is filled with friends, parties and fun.
Often we find ourselves with many things to be done.
So when you find you are too busy and a meal you need to fix,
Just go and get a kettle, 7 cups of water, 1 pound of chicken
(or hamburger) and this MIX.
Let cook and simmer slowly while your things to do,
But when you sit down to eat it, remember our friendship, too!
PUPPY CHOW (also from the Bright Moments Small Gifts and Thank You vol.2)
You will need:
New, large dog dish
Gather ingredients for "Puppy Chow"
Plastic Wrap
Copy of Tag
Colored Pencils
Tape
Bow
DIRECTIONS:
Using recipe below, make Puppy Chow. Wash and dry new dog dish and fill with Puppy Chow. Cover filled dish with plastic wrap and tape wrap to the bottom. Copy, color and cut out tag. Attach tag and bow to the top.

PUPPY CHOW
Melt together:
1/2 cup butter
6 oz. pkg. peanut butter chips
2/3 cup peanut butter 6 oz. pkg. chocolate chips
Pour over:
3 cups Wheat Chex 3 cups Corn Chex
Mix all together well! After mixing, sprinkle on 1/2 cup powdered sugar and stir. Store in large bown with lid. This is a very interesting mix. Luckily it tastes much better than it looks.
