It is known with the name of Panela, and depending on the place where you are at, it is known under other different names, such as: raspadura (grated), rapadura, atado dulce, tapa de dulce, piloncillo, papelón or chancaca.

The characteristic of this food is its only ingredient: sugar cane juice, which is crystallized in order to obtain a fine texture grain.

The uses of panela are exactly the same as of refined sugar that we all know. Therefore, it can be used with different kinds of sweet food and desserts, infusions, coffee, chocolate, yogurt, milk, shakes, juices, jams, syrups, etc. Many recognized chefs highly appreciate this condiment because of its purity and natural characteristic.
