| Ingredients:
3 lbs ground lean Bison 1 16oz. Can peeled tomatoes 2 onions 1 tbs. Ground black pepper 1 25oz. Can kidney beans 1 25oz. Can chili beans 4 cups ketchup 1 tbsp. Chili powder 1 tsp. Garlic 2 tsp cilantro 1 tsp thyme � tsp pwd mustard |
| Bison Chili |
| Directions: Fry burger in skillet. In large pan add burger and remaining ingredients. Simmer for at least 1 hour. |
| Ingredients:
4-5 lbs Bison chuck roast brown sugar BBQ Sauce: � cup ketchup � cup butter 2tbs. Mustard 1tbs Worcestershire sauce 2tbs brown sugar 1tsp salt 1 raw onion, sliced |
| Bar-B-Que Bison |
| Directions:
Pat sides and top of chuck roast with brown sugar. Wrap in foil and cook 10 hors at 225-250F. Separate into large chunks. Combine cooking juices with the following sauce and marinate meat for 4 hours. |
| Ingredients:
2 lbs lean sirloin Bison steaks (cut in 1� chunks) 1 cup dry sherry � cup vegetable oil 3 tbs. Onion soup mix � tsp pepper 1 sm. Clove garlic, minced Zucchini cut in 1� chunks Green or red pepper, �� sliced Onions Whole mushrooms Cherry tomatoes Corn |
| Bison Kabobs |
| Directions:
Combine sherry, oil, dry onion soup mix, salt, thyme, pepper, and garlic in a bowl. Add meat; stir to coat. Cover and marinate at room temp. for two hours or overnight in refrigerator. Drain meat, reserving marinade. Using skewers, alternate meat with zucchini, mushrooms, green peppers, and onion. Barbecue kabobs 4-6 inches from heat until all sides are browned, (8 min. total broiling time.) Turn every 2 min. brushing with marinade. After removing from barbecue, add a cherry tomato to each skewer. |
| Meatball Ingredients:
1 lbs ground lean Bison 1/2 cup finely chopped mushrooms 1/3 cup finely chopped red onion 1 egg, beaten 1 tsp salt 2 Clove garlic, minced |
| Oven Roasted Bison Meatballs |
| Meatball Directions:
In a medium bowl combine all ingredients. Mix until well blended. Form into 24 meatballs about the size of a large walnut. Spray a jelly roll pan with non-stick cooking spray. Place meatballs on pan. Roast in preheated oven 400*F oven for 10 minutes. Serve with dipping sauce. |

In small bowl combine all ingredients. Stir to blend and serve. |
| Dipping Sauce:
2/3 cup non fat mayo 1/3 cup Dijon style mustard 3 tbsp. Chopped green onions |

Ingredients: 2 lbs cubed bison meat 3 med. Potatoes peeled 6 carrots peeled sliced 8 oz. Can peeled tomatoes 12 oz. Can tomato sauce 2 tbs. Cooking oil 2 onions chopped � tsp. Pepper 2 tsp. Salt � cup water |
| Bison Stew |
| Directions:
Brown meat in small amount of oil in a large kettle or dutch oven. Then add onions and cook until golden. Add tomato sauce, carrots, peeled tomatos, seasonings and cover. Cook 1 hour over very low heat. Add potatoes and � cup water, if needed. Cover and cook � hour over very low heat. |
