Cheese Spread (Körözött)
This is so simple, yet so tasty, it knocks people’s socks off! It lasts for days and is great for snacks too. Some versions use cottage cheese instead of cream cheese. The authentic version is with goat cheese. I don’t like it that way.


Bring to room temperature: Two 8 oz bricks of cream cheese

1 stick margarine or butter (You can vary the proportion if you like more butter)

Add:

1 tsp. regular mustard (not dijon, although it's probably OK too)

1/4 cup finely chopped onion

1 or 2 cloves of garlic, (the more the better!) finely chopped

1/4 tsp caraway seeds (optional)

If you have a spare coffee grinder, use it to grind the caraway seeds. If you go to Hungary, be sure to buy the ground caraway in packets. It is very convenient and perfect in many dishes. This adds a wonderful flavor without the annoying seeds.

paprika to taste,--1-2 teaspoons or enough to create a pleasant, rich orange color.

Combine all ingredients with a fork until well blended. Serve with sliced bread. Chill any remainder and serve again! Serving suggestion: Spread on baguette slices and place a sliced anchovy or small sardine on top of each slice.
