Cheese Spread (Körözött)

This is so simple, yet so tasty, it knocks people’s socks off!It lasts for days, is great for snacks too. Some versions use cottage cheese instead of cream cheese. The authentic version is with goat cheese. I don’t like it that way.

Bring to room temperature 2 8 oz bricks of cream cheese

1 stick margarine or butter

Add:

1 tsp. Mustard

1/4 cup chopped onion

1 or 2 cloves of garlic, finely chopped

1/4 tsp caraway seeds (optional)

If you have a spare coffee grinder, use it to grind the caraway seeds. These add a wonderful flavor without the annoying seeds.

paprika to taste,--enough paprika to create a pleasant, rich orange color.

Combine all ingredients with a fork until well blended.Serve immediately on sliced bread. Chill any remainder and serve again! Serving suggestion: Place a sliced anchovy or small sardine on top of each slice.
