Homemade Dill Pickles/Kovaszos Uborka

A summertime treat, these pickles take only four or five days to develop their characteristic taste. The trick is to find a large enough jar! A one gallon size is the smallest you should use for the best results.

4 lbs fresh pickles (or enough to fill the jar), washed
2 tablespoons pepper
6 cloves garlic
1-2large bunches dill
4 Tablespoons salt
2 slices toasted white bread

Clean, 1 gallon jar

Prick pickles with a skewer. Place 1 large bunch of dill in the bottom of the jar. Carefully, arrange the pickles over the dill so they remain standing, adding dill sprigs between pickles.

Boil 2 quarts water with 4 tablespoons salt for 5 minutes. Let cool. When lukewarm, pour over the pickles.

Place the bread on top of the pickles. Save any remaining liquid. Cover jar with loose weave type towel, (we use a Handi-Wipe) and secure with a rubber band. Place jar outside, not in direct sun, but a warm area. The temperature needs to reach at least 80 degrees. Replenish any lost liquid with more salt water mixture. Check daily. After 4 or 5 days, the bubbling subsides and the water will be cloudy. Take the pickles out of the jar and place into a clean jar with enough strained juice to cover. Keep refrigerated until serving.

Cucumber Salad(Uborka Salata)


2-3 cucumbers, peeled, sliced thinly
vinegar
salt/fresh ground pepper/paprika
2 tsps chopped dillweed (fresh or dried)
1 small clove garlic, chopped
2-3 tsp sugar
Sour cream, optional

Place sliced cucumbers in a bowl and sprinkle generously with salt. Let stand for at least 25 minutes. Squeeze out liquid and seeds, and discard. Place cucmber slices in serving bowl. Prepare vinaigrette: Fill a 10 oz drinking glass 3/4 full water. Season with about 3 tablespoons vinegar to start, 1/2 tsp salt. Check taste. The vinegar flavor should not be overpowering, but add more if needed. The sugar should balance the vinegar taste. When you have a gentle balance of the ingredients, pour over the cucumbers. Add chopped garlic, garnish with dill, ground pepper, paprika; add sour cream, if desired.
