Cran Apple Crumble submitted by ansondale
- 3/4 cup low fat granola
- 3/4 cup fresh cranberries
- 3 tbsp maple flavoured syrup
- 3 tbsp honey
- 3/4 tsp vanilla
- 3 apples, peeled and cored
1/4 cup brown sugar- 3/4 tsp cinnamon
1. Preheat oven to 375 degrees.
2. Spray 8 or 9 inch baking dish with cooking spray.
3. Combine granola and cranberries in food processor; process until crumbly (best to pulse pulverize so you don't over process).
4. Pour granola mixture into large bowl.
5. Combine syrup, honey and vanilla in a small saucepan; simmer over medium heat, stirring constantly, until ingredients are heated through.
6. Gradually pour syrup mixutre over granola, mixing with hands to moisten and crumble.
7. Place apple slices in baking dish; sprinkle with brown sugan and cinnamon.
8. Top with granola mixture and bake 15 to 25 minutes until top is lightly browned and apples are soft.
9. Top with nonfat Cool Whip or frozen yogurt if desired.
