Moroccan-spiced Pork with Couscous submitted by ansondale
- 1/2 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground ginger
- 1/2 tsp ground allspice
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 lb boneless pork loin, cut into 3/4" cubes
- 1 can (14 1/2 oz) vegetable or chicken broth
- 1 1/4 cup couscous
- 1 1/2 cups diced plum tomatoes
- 1/3 cup chopped red or green onion
- 1/4 cup chopped parsley
- 3 tbsp chopped fresh cilantro
- 1 tbsp chopped fresh mint
- 1 tbsp olice oil
- 3 tbsp lemon juice
1. In a self-sealing bag, combine garlic powder, cumin, paprika, ginger, allspice, salt and pepper. Add pork cubes; seal.
2. Toss until pork is coated with spice mixture. Set aside.
3. In a medium saucepan, bring broth to a boil.
4. Stir in couscous and remove from heat.
5. Cover; let stand 10 minutes.
6. Stir in tomatoes, onion, parlsey, cilantro and mint.
7. In a large non stick skillet, heat the olive oil over medium high heat.
8. Add pork cubes; cook and stir 4-5 mintues or until done.
9. Place couscous on serving platter; top with pork cubes.
10. Drizzle lemon juice over pork and couscous.
