Slimming Chicken Jambalaya

    • 1/4 pound turkey link sausauge, sliced
    • 8 oz boneless, skinless chicken breast
    • 1 can fat free reduced sodium chicken broth
    • 1 (4 oz) slice black forest ham, diced
    • 1 cup chopped onion
    • 1 cup chopped green bell pepper
    • 1/3 cup celery, chopped
    • 1/3 cup scallion, chopped
    • 2 cloves garlic, chopped
    • 1 can (15 oz) ready cut tomatoes
    • 1/4 cup Worcestershire sauce
    • 2 tsp dried thyme
    • 1/8 tsp black pepper
    • 1/8 tsp salt
    • 2 tbsp chopped fresh parsley
    • 1 1/2 cups uncooked white rice

     
    1. Coat dutch oven with olice oil cooking spray and heat over medium heat.


    2. Brown sausage, then add chicken and a splash of broth.

    3. Cook 2 minutes, adding more broth if meat sticks.

    4. Add ham; cook 1 minute. Remove meats; set aside.

    5. Add splash of broth to pan; cook onion, pepper, celery, scallion and garlic 2-3 minutes.

    6. Add remaining borth and all other ingredients except rice.

    7. Cover, reduce heat and simmer 25 minutes.

    8. Cook rice according to package directions.

    9. Stir rice into chicken mixture.

    10. Heat through and serve.
