Plum Upside-Down French Toast submitted by ansondale
- 6 eggs
- 1/4 cup skim milk
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 6 slices (1" each) French bread
- 2 cups chopped pitted, fresh or canned plums
- 1/3 cup firmly packed brown sugar
- 1/2 tsp grated lemon peel
- Mint leaves (optional)
1. Preheat oven to 375 degrees F.
2. In medium bowl, beat together eggs, milk, vanilla, and almond extract until well blended.
3. Pour about half mixture into an 8"x8"x2" baking dish.
4. Place bread slices in mixture.
5. Pour remaining mixture over bread. Let stand utnil liquid is absorbed, turning occasionaly, about 10 minutes.
6. In medium saucepan over medium heat, cook plums in 2 tbsp wter until tender, about 3 minutes.
7. Stir in sugar and lemon peel.
8. Spread mixture over bottom of baking dish.
9. Gently place soaked bread slices on plum mixture.
10. Bake until lightly browned, 20-30 minutes. Garnish with mint leaves if desired.
