Salsa Meatballs with Rice submitted by ansondale
- 1/2 lb superlean ground beef
- 1 cup seasoned bread crumbs
- 1/2 cup salsa
- 1/2 tsp garlic powder
- 2 tsp beef broth
- 2 cups non fat pasta sauce
2 cups cooked rice (white or brown
1. Combine ground beef, bread crumbs, salsa and garlic powder in a medium bowl; mix well.
2. Shape into 1 1/2 inch meatballs.
3. Spray large non stick skillet with cooking spray; add beef broth and heat over medium-high heat.
4. Add meatballs; spray with cooking spray and cook until meatballs are browned on all sides.
5. Stir in pasta sauce.
6. Bring to a boil over high heat.
7. Reduce heat to low, cover and simmer 15 to 20 minutes until meatballs are cooked through.
8. Serve over cooked rice.
