For PCs, I recommend using the latest version of Impulse Tracker for playing .s3m, .mod, .it, and .xm formats. Keep in mind this is a Dos proggie. For Win95 machines, you can use ModPlug, though it isn't as 100% as IT is, it is a friendly (simple) interface and can play most file formats (including .it, which is still somewhat rare). The only formats not covered by IT and ModPlug are .med and possibly .669.

I will have some trouble recommending Mac tracking software, as I have little direct familiarity with them. However, I will include links to Mac software which sound sufficient at doing the job.
