1 Tb oil
1 lb beef, cubed into 1 inch squares
4 to 6 small onions, peeled but kept whole
Salt and pepper
1/2 c water
4 potatoes
4 carrots
1 large can tomatoes
1 Tb flour
1/4 c water
Dredge beef cubes with flour.
Using a pressure cooker, add oil and brown meat, a few pieces at a time, over medium heat and remove from cooker as they are done. Remove all meat from cooker and insert cooking rack. Place meat, potatoes (cut into quarters), carrots (thickly sliced), tomatoes and onions into cooker. Add 1/2 c water. Make sure the cooker is no more than 2/3 full.
Seal cooker and place pressure regulator on vent. Cook over medium heat, about 10 to 12 minutes with regulator rocking gently. Remove from heat, and cool cooker by placing under cold running water. Don't open until completely cooled! Carefully remove pressure regulator and then open cooker.
Remove meat and vegetables to a large bowl.
To remaining liquid, add a paste of flour and water, salt and pepper. Cook
over medium heat until gravy is cooked and thickened. Pour over vegetables
and meat and serve with baking powder cheese biscuits.
