2 c sifted all-purpose flour
4 tsp baking powder
1/2 tsp salt
4 Tb shortening
2/3 to 3/4 c milk
1/2 c grated marble cheese
Sift the flour, baking powder and salt together. Mix in the grated cheese. Cut chilled shortening finely into the dry ingredients. Add the milk slowly, stirring only until soft dough forms a ball.
Turn dough onto a lightly floured board and sprinkle lightly with flour. Knead lightly for a few seconds. Then fold in half. Roll out to 3/4 to 1 inch thickness and cut with a floured biscuit cutter. Place on cookie sheet and bake at 450 for 12 to 15 minutes, or until slightly golden brown on top.
Folding the dough before cutting will make
the biscuits fall apart easily into two halves when buttering.
