Throughout the ages witches have been healers.  Herbal remedies are still used today.  So I will give you some general information on herbs now, to do all the herbs would take me the rest of my life, so I will stick with the most familiar and most used ones.
I would suggest you plant your own herb garden (although, I have been banned from doing so by several friends).

First lets cover the different ways that herbs can be used and stored:

Infusion:  1 - 3 teaspoons of dried herbs
                1 cup of water
                steep 20 minutes
                strain
                last 2 days refrigerated
                normal frequency 1 - 3 cup a day

Decoctions :  1 tablespoon of dried herbs
                     2 cups of water
                     place herbs and water in a saucepan
                     boil then simmer for 15 - 30 minutes in covered saucepan
                     strain
                     normal frequency 1 - 3 cups a day

Tincture:  1 ounce of dried herbs
                5 ounces of alcohol:  volka, rum, brandy or cider vinegar
                place ingredients in a ceramin container with a non-metallic lid
                for 2 - 6 weeks, shaking periodically
                strain and store in another clean jar
                lasts for 2 years
                normal frequency 1/2 to 1 teaspoon three times a day

Syrups:  1 part herbal infusion or decoction
              1 part honey or unrefined sugar
              combine ingredients in a saucepan
              heat gently until sugar or honey has completely dissolved
              pour into a clean ceramic container
              last 3 to 6 months refrigerated
              normal frequency 1 to 2 teaspoons three times a day

Poultice:  1/4  - 1/2 cup dried herbs
                water
                blend the herbs in a food processor and add a bit of water to create
                a paste
                not storable

Herbal Oil:  (hot method)
                    8 ounces of dried herbs
                    3 cups of oil (extra virgin oil, safflower or grapeseed oil)
                   combine in a double boiler, cover and simmer for 2 - 3 hours
                   strain into a dark bottle
                   store up to one year refrigerated
                   massage oil

Herbal Oil:  (cold method)
                    8 ounces of dried herbs
                    2 cups of oil (extra vergin olive oil, safflower or grapeseed oil)
                    pack glass jar with herbs and cover them in the oil
                    cover the jar
                   place jar in a sunny place for 2 weeks shaking the jar once daily
                   *if oil doesn't seem dark enough or aromatic enough after 2
                   weeks add more herbs and repeat the process
                   strain into a dark bottle
                   store refrigerated up to one year
