Misssissippi Mud Cake
In sause pan, melt together
2 sticks margarine
1/3 c cocoa
Add:
4 eggs
1 1/2 c flour
2 c. sugar
1 tsp. vanilla
1/2 tsp salt
Mix all ingredients together and pour into greased and floured baking dish. (9x13). Bake at 350 for 20 minutes. Remove from oven and cover totally with miniture marshmellows. Put back in oven and bake until marshmellows have melted and lightly browned. Let cool.
Icing:
Melt together:
1/2 c cocoa
1/2 c milk
1/2 stick margarine
Add: 1 box powdered sugar, 1 tsp vanilla and 1 c nuts.
So...Rich and Good!
Texas Sheet Cake
In mixing bowl combine:
2 c . sugar
2 c. flour
In sause pan combine and bring to boil:
1 stick margarine
5 Tbsp cocoa
1/2 c. Crisco shortening
1 c. water
Remove from heat and pour over sugar flour mixture and mix well. Add:
1 c buttermilk
1 tsp soda
2 eggs
1/4 tsp cinnamon
1 tsp. vanilla
Mix well and pour into greased and floured baking pan. (9x13) Bake at 400 for 20 minutes. Cool and frost with:
Icing: Melt together
1/2 c milk
1 stick margarine
3 Tbsp cocoa
Add 1 Box powdered sugar
1/2 c chopped nuts
1 tsp vanilla
Carrot Cake
2 c flour
2 c sugar
1 tsp soda
2 tsp cinnamon
In seperate bowl, mix together:
1 tsp salt
4 eggs
1 c. Wesson oil
3 c. grated carrots
Mix salt, eggs, oil and carrots with dry ingredients. Pour into greased and floured tub pan. Bake at 350 for 1 hour.
Frosting:
1 8 oz pkg cream cheese
1 lb box powdered sugar
2 tsp vanilla
chopped nuts
Oatmeal Cake
1 1/4 c boiling water
1 c oatmeal
1 stick margarine
Pour water over oatmeal and margarine, let stand 20 minutes.
1 c sugar
1 c brown sugar
2 eggs
1 tsp soda
1 1/4 c flour
1 tsp cinnamon
Mix all ingredients together with oatmeal mixture. Pour into greased and floured 9 x 13 pan. Bake at 350 for 30-35 min.
Icing:
1 c sugar
2 Tbsp flour
1 c milk
1 stick margarine
1 c chopped pecans
1 c. cocanut
In sause pan, bring flour, milk and margarine to a boil. Boil for about 7 minutes. Remove from heat and add pecans and cocanut. Cool. Spread onto cake
Butter Pecan Pound Cake
1 Betty Crocker Butter Pecan Cake Mix
1 Betty Crocker Coconut Pecan Frosting
4 eggs
1 c oil
1 c water
Mix all together and bake in bundt pan at 350 for 45 minutes.
7- Up Pound Cake
2 sticks margarine
1/2 c shortening
3 c sugar
5 eggs
1 tsp vanilla
1 tsp lemon flavoring
3 c sifted flour
1 c 7-up
MIx all ingredients together. Pour into greased and floured bundt pan. Bake for 1 hr and 10 minutes
Seven Minute Frosting
1 1/2 c sugar
2 egg whites
1/2 tsp salt
1/3 c water
1/4 tsp cream of tartar
1 tsp vanilla
Combine all ingredients except vanilla. Beat with a mixer in double boiler over boiling water for 7 minutes. Remove from heat and add vanilla.
Note: This is what I use for my coconut cakes. I just mix a yellow cake mix according to directions and frost with this icing. So.. Good!
