Joyce is a descendant of an Acadian family that emigratted from Canada during the exile of the Acadians. She was born in Thibodaux and raised speaking French. She learned English in school later.

Joyce loves her heritage and speaks about it passionately. She has written a cookbook full of Cajun cuisine including gumbo, crawfish, stuffed crab, alligator sauce piquante, jambalaya, etc. You may buy a copy so you can cook for your friends.
