UTENSILS FOR MAKING SUSHI

HANGIRI
A rice-cooling tub is used for cooling the vinegared rice giving it the
perfect texture and gloss. It is made of cypress bound with copper hoops,
but any wooden or plastic vessel can be used instead.

SHAMOJI
A flat spatula is used to turn and spread sushi rice while cooling it.
You can use an ordinary spoon instead, wooden or plastic.

UCHIWA
A fan is used to drive off moisture and encourage evaporation to get the
right texture and flavor of sushi rice. Originally this fan is made of
bamboo ribs covered with either paper or silk. If no fan is available,
a cardboard or a magazine can be used instead.

MAKISU
A small bamboo mat is used to make rolled sushi.

MANAITA
A chopping board, is a must. Traditionally made of wood, but nowadays
many people prefer chopping boards made of rubber or resin.
