Japan is an island nation, so sushi, the combination of raw fish and seasoned rice
The Japanese used to preserve their fish pressed between layers of salt on vinegared rice
Sushi's original name is actually "sumeshi". "Su" means vinegar and "meshi" means rice.
Nigiri-sushi reached it present form in the mid 1800's when some entrereneur decided
is a supremely logical food. The story of Sushi began for hundreds of years ago.
until the fish had fermented, then the rice was discarded. Later the word sushi was derived:
the marriage of vinegared rice with fish.
But when people start to say it fast "sumeshi, sumeshi, sushi"
--- it became just "sushi".
to put slices of raw fish on pads of rice. And later different combinations and ways
of serving them evolved and is now one of Japans most popular foods.
