| Beat mashed potatoes until very smooth, add salt and flour. Form a dough that is not sticky. Add a little flour if it is until you can easily kneed on a slightly floured surface. Pinch off enough dough from ball to form 1" balls. form all dough into 1" balls. With greased hands, flatten each ball in palm, fill if desired and fold in half. Pinch slightly to seal and drop into soup or sauce. If the dough starts sticking to palms, oil hands again. Gnocci may be filled with a little meatball mixture.. The dumplings/gnocci are done when they float to the top of the sauce or soup. Best in Italian Minstone Soup or in Spagetti Sauce served as a side dish.. |
