Spagetti Sauce
1 T olive oil
3 T chopped onion
1/2 C chopped mushrooms
8 T tomato paste
1 1/2 t crushed garlic
6 C water
1/2 t salt
1/4 t pepper
1/2 t paprika
1/2 t oregano
2 leaves ( 1 t dry ) fresh sage
2 leaves ( 1 t dry ) fresh basil
1 bay leaf

In a cooking pot heat oil. Add onion and mushrooms. Fry until browned.

Add water then the rest of the ingredients. Bring to a boil. If adding
Italian Meatballs, now is the time.

Cover and continue cooking on low flame keeping at a soft bubbling ( not a boil ) for about an hour. remove bay leaf.

Serve over spagetti or desired pasta. Garnish with grated parmesan and chopped black olives.
