Pita Bread
1 Basic Bread Dough Recipe
corn meal
olive oil
Prepare dough as instructed on given page, let rise once.

Divide dough and kneed into tennis ball sized balls. Roll out on a floured surface until 1/4" ( .6 cm ) thick and as round as possible.

Let stand for 20 minutes covered with damp cloth. Transfer carefully to baking sheet sprinkled with a bit of corn meal.

Meanwhile preheat oven to hottest degree. Preferably 500 F ( 260 C ). Bake Pita Bread in middle of oven for 10-15 minutes or until puffed and lightly browned.

Remove from oven brush off excess flour with palm and a pastry brush, brush with olive oil. Immedietly cover with dry cloth and let cool a bit before cutting in half.

Stuff with favorite sandwich ingredients or dip in humus or guacamole.

NOTE; Do not puncture or damage the dough after it sat, or your pita will not puff! Handle with care and love :)
