| Prepare 1/2 Basic Bread Dough Recipe. Let rise once. Turn onto a floured surface and kneed for 1 minute. Divide into 16 equal pieces. Roll each ball into a 7" rope. Seal ends tightly by overlapping them 1/2" and rolling with your palm. Let bagels rise for about 1/2 hour. While they are rising fill a 4 quart pot 2/3 full of water and bring to a boil. Add 1 T white sugar to the water and drop bagels into the boiling water two or three at a time. Wait until they rise to the surface and turn. Cook for a total of 1 minute. Preheat the oven to highest temperature. Carefully remove the bagels with a slotted spoon draining slightly. Place onto a parchment paper lined cookie sheet. Bake in a very hot oven while still steaming for about 20 minutes, turning over once when one side has browned. Makes 16 |
