| 1 chicken ( cut into pieces ) or equivalent. 1 C flour oil salt pepper 1 C orange juice 1/2 t crushed garlic 1/2 t ginger powder 2 T white wine 2 T brown sugar 2 T honey 1 orange 1 sprig rosemary |
| Coat chicken pieces in flour and fry in hot oil in a frying pan until golden, but not brown. Srinkle with a few pinches of salt and pepper. In a saucepan, combine orange juice, garlic, ginger, wine, brown sugar and honey. Bring to a boil and simmer on a low flame for 5 minutes. Slice ends off of the orange. Divide in half and slice into 1/4" slices. Place in a casserole dish on the bottom and the rosemary sprig on the orange slices. Place the chicken pieces over the slices and rosemary. Baste each piece well with the sauce. Pour remaining sauce into the casserole. Bake at 200 C until chicken is nicely browned. NOTES: May be used for any fowl. |
