| 5 T olive oil 1/2 kilo ( about 1 pound ) chicken gizzards 1 small onion ( chopped ) 1/2 t crushed garlic 1/2 t cumin 1/2 t chili powder 1/2 t paprika 1/8 t ginger powder 1/8 t black pepper 2 T fresh basil ( chopped ) 2 tomatoes ( peeled and cut into 1" cubes ) 1 C white wine 4 C water |

| Clean gizzards and wash well under cold water, removing all fat and yellow membranes ( if any ). Put in a soup pot and cover with water. Bring to a boil, change the water and bring to a boil again. Boil for 10 minutes each time. Drain all water from gizzards. In the same soup pot, add olive oil to gizzards and put back on a high flame. Stir to coat the gizzards and saute for 10 minutes or until grey. Add onion, garlic and all spices. Brown well. Add basil, tomatoes and wine. Cover and turn down the flame for 2 minutes. Add water, stir well scraping bottom. Cover and let simmer on a low flame until all water is evaporated and a sauce is left. The gizzards will tenderize while simmering. |
