Country Fried Chicken
1 chicken ( cut into pieces )
2 C flour
salt
pepper
1 t chili flakes
oil for frying
1/2 C water ( optional )
Heat oil in frying pan until very hot, about a 1/2 inch deep. Wash the chicken pieces in cold water. Roll each piece of chicken AS IS in regular flour. Place carefully into faying pan.

Salt and pepper the chicken pieces slightly, and sprinkle chili flakes over them.

Cover with a lid on high flame. Do NOT touch or turn until sides are dark brown.

Turn the flame on low and turn each piece over carefully and raise the flame again. Cover and let brown well without touching. Remove from oil and serve.

NOTES; If the chicken is stubborn and sticks to your frying pan, don't force the pieces. Add 1/2 C water to the chicken and cover with a lid for 30 seconds on a low flame, then turn and brown the other side.
