Cumin Beet Salad
2 red beets
1 t ground cumin
1 T lemon juice
1/4 t salt
1/4 t pepper
1/2 t chili powder
1 T olive oil
1 t crushed garlic
2 sprigs parsley
Peel and cube beets. Boil until very soft, drain well. Rip off leaves from parsley sprigs, chop finely and add to beets along with all remaining ingredients.

Garnish with parsley, chill at least an hour before serving.
