Letter to the Editor: After reading "Sir Gawain and the Green Knight", the students were to compose a reactionary letter to a "published" article and letter citing why Sir Gawain was worthy of remaining a knight of King Arthur's Round Table, despite his faults.
Resume: The students were to create a professional resume geared toward the technical sales representive position they were "applying" for.  This resume needed to include job objective, education, work experience with listed duties, technical skills, and references. 
Cover Letter: The students were to apply for a technical sales representative positionas e-mailed to them by the "human resources director" of "Surreal Sales".  The requirements of this letter included an introduction with reason for writing, specific examples and explanations of technical experience, other special abilities, a thank you, and request for action.
Letter of Recommendation: Following comic book analyzations presented using Corel Presentations, each student was required to write a letter of recommendation for an assigned person in class.  This letter had to included a discussion of technical knowledge and "sales" abilities as performed through the comic book presentation.
A Knight's Tale Review: Following the reading of "Legends of King Arthur" and "Sir Gawain and the Green Knight", each student watched the movie "A Knight's Tale" and was required to write a review of the movie. This review had to include  a discussion on the realistic and unrealistic themes of medieval life, the theme of medival romance, and the enterainment value of the movie. Their knowledge of the medieval life and romance from the two stories that they had read aided them in writing this review.
Chivalry in Music: As a "connecting" activity, students were to find lyrics to a modern song and explain how two elements of chivalry are expressed in the song.  They then to explain how those same two elements were shown in our medieval literary studies. 
Wedding Announcement: As a "connecting" activity to Braveheart, students were to create a wedding annoucement. They were to write the announcement for two important characters in the story that just gotten married. Within the announcement they were to answer the questions who, what, when, where, and how.
Braveheart Slide Show: This assignment required students to analyze quotations and lessons that individual characters from the novel may have learned about life.  These ideas were then incorported into a multimedia PowerPoint slide show and added to their websites.  SEE SAMPLE
Controversial Projects:  This assignment required students to research a controversy related to curriculum-based readings, and present it through Power Point to a targeted audience.
