Roast Pork
Tenderloin

I was on a mission to convert Ian to
pork (he swore he hated all pork) and this was the final convincer.
This is so good that even he has to admit that pork is delicious (sorry
Winnie!)
INGREDIENTS
| 1 1/2 lb strip pork
tenderloin |

| Soy sauce |
|
1/2 cup |
|
| Onion, grated |
|
1 Tbsp |
|
|
Garlic,
crushed |
|
1 clove |
|
| Vinegar |
|
1 Tbsp |
|
| Cayenne pepper |
|
1/4 tsp |
|
| Sugar |
|
1/2 tsp |
|
METHOD
-
Make marinade - brush over meat
for several hours before and during cooking.

Roast, uncovered, in a slow oven
(300 degrees) until tender, about 1 3/4 hours.

Baste frequently with marinade.

Serves 6.
