toffee chocolate chip cookie ice-cream sandwiches
from canadian living – august 2005 issue

 

the addition of shopped chocolate bars makes these irresistible.  with these treats waiting in the freezer, there’s no last minute fussing for dessert.

 INGREDIENTS

vanilla, chocolate or butterscotch ice cream, slightly softened

2 ½ cups

toffee bits, finely chopped pecans or coloured sprinkles

TOFFEE CHOCOLATE CHIP COOKIES

butter, softened

½ cup

125 mL

granulated sugar

½ cup

packed brown sugar

all-purpose flour

baking soda

bars, (39 g each) chocolate covered toffee bars, chopped

semisweet chocolate chips

1 cup

chopped pecans

½ cup

METHOD

  • line rimless baking sheets with parchment paper or grease; set aside

  • in large bowl, beat butter with granulated and brown sugars until fluffy.  beat in egg and vanilla.  in separate bowl, whisk together flour, baking soda and salt; stir into butter mixture in 2 additions.  stir in toffee bars, chocolate chips and pecans.

  • roll dough by heaping tablespoonfuls into twenty 1 ¾ inch balls.  place 2 inches apart of prepared pans.  flatten to ½ inch thickness, rounding edges with fingers.  bake in top and bottom thirds of 350 degree oven, rotating and switching pans halfway through, until edges are golden, about 12 minutes. transfer to racks; let cool completely.

  • spread about ¼ cup ice cream on bottom of each of 10 cookies; top ice cream with second cookie.  roll sides in toffee bits.

  • wrap individually in plastic wrap; freeze in airtight container until firm, about 4 hours.

NOTES

  • really yummy, but they're really big, so make the cookies pretty small.

  • i made them on a hot day, and the ice cream was soft.  it would have been better to freeze the cookies before assembling them, so that the ice cream stayed more firm.

  • i think I would skip the skor bars next time and use smarties, especially if I'm making them for kids.
